INGREDIENTS:
- 1 lb chicken thighs
- 1 tbsp extra virgin olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp paprika
- 1/8 tsp cayenne pepper
- Garlic butter
- 5 tbsp unsalted butter, softened
- 3 galic cloves, minced
- 1/3 cup grated parmesan
- 1 tsp pepper flakes
- 2 tbsp fresh parsley, minced
- salt and pepper to taste
RECIPE:
- Before you start, make sure to soak your wooden skewers in water for at least 30 minutes.
- Preheat Fritaire to 400F
- Slice the chicken thighs into bite-sized pieces then combine in a bowl with the oil and seasoning.
- Mix thoroughly until combined and marinate for at least 30 minutes.
- Thread the chicken onto 4 skewers, ensuring they are tightly packed
- Place the skewers in the Fritaire and cook for 10 minutes
- Meanwhile in a meadium bowl combine the garlic butter ingredients, remove 1/3 of the butter and set aside.
- Flip the skewers and brush them with 1/2 of the remaining garlic butter
- Cook for 3 minutes and brush again with butter or until internal temperature reaches 165F.
- Remove the skewers from Fritaire and brush with 1/3 of garlic butter (the clean, reserved butter).
- Sprinkle the skewers with some extra parmesan and parsley and enjoy.
