INGREDIENTS:
1/2 cup rolled oats
1small ripe banana
1 egg1/4 whole milk
1 tbsp peanut butter
1 tbsp honey
1 tsp lemon zest
1/8 tsp salt
1/4 tsp baking powder
2 tbsp chocolate chips
RECIPE:
1. Spray two 4-inch ramekins with non stick cooking spray and set aside.
2. To a blender add the rolled oats, egg, baking powder, banana, milk, honey, peanut butter, lemon zest and salt, and blend for 30-40 minutes, until fully combined.
3. Stir in the chocolate chips.
4. Divide the batter into 2 ramekins.
5. Bake at 320F for 20-25 minutes or until a toothpick inserted into the cakes comes out clean.
6. If the top of the baked oats is browning too quickly, cover the ramekins with 2 pieces of aluminum foil.
7. Let the baked oats cool down for at least 10 minutes, before serving.
